I found this recipe on the Real Simple web site. It is real simple but delicious.
In a small bowl combine:
1/4 cup salted, roasted almonds, coarsely chopped
1/4 cup golden raisins
2 Tbsp. chopped chives
1 1/2 Tbsp. extra virgin olive oil
Pepper and maybe more salt to taste
In a separate small bowl mix:
1 cup ricotta
1/2 tsp. garlic powder
1 tsp. sugar
1/2 tsp. onion powder
ground pepper or hot pepper flakes to taste
Separate the leaves of 3-4 endive spears.
Place a dollop of cheese on each and sprinkle with nut/raisin mixture. Drizzle with a little extra olive oil.
I sprinkled the platter with chive flowers because I happened to make this while the chives were in bloom.
