Mostly we eat red cabbage raw. But on the rare occasions a piece of beef graces our table, cooked red cabbage makes a spectacular accompaniment. Particularly if you have a little Polish in your background.
1 small head of read cabbage, shredded
1 apple, sliced (any kind of sweet apple will do, seeds removed)
1 onion, diced
1/4 cup water
1/4 cup white vinegar
1/4 cup sugar
salt and pepper to taste
Combine all and cook in a pressure cooker, 10-15 minutes under pressure.
