Vodka Sauce

From Beth D’Antonio.

Large can of crushed tomatoes (or 2)
lots of sweet onions, diced
heavy cream
vodka (1/4 – 1/2 cup)
dash of cayenne pepper
prosciutto, minced
salt & pepper to taste

Saute onions until soft. Add tomatoes and cook. Add vodka, be sure to cook off alcohol, cook about 30 minutes.

Add cayenne, cream and prosciutto at the end. Add enough cream to make the sauce pink.
