Pear Sorbet

Mike & I used to love to make sorbets.  We bought a Donvier ice cream maker and went crazy.  Mike started with this recipe.  I think it came from a cookbook called Cooking with Annemarie by Annemarie Huste.

1 cup water
3/4 cup sugar
1 1″ piece of vanilla bean
4 pears, peeled and cored
1 Tbsp. pear brandy

Combine water, sugar and vanilla bean. Boil, add pears, bring to a boil and then simmer until the pears are soft. Cool and remove bean. Blend, add brandy and freeze in an ice cream machine.

We quickly discovered that sorbets are just so easy.  We used to freeze pears & peaches in a simple syrup. We would let a package of fruit partially thaw and then blend it up; add a splash of brandy and freeze!
