Rice Pudding

Rice Pudding with Macerated Strawberries

6 cups hot milk
1 cup rice
1 tsp. salt
1/2 cup sugar

Mix all ingredients in the top of a double boiler and cook over (not in) boiling water until the rice is soft, about an hour. Stir frequently.

Remove from heat and stir in 2 Tbsp. butter and 2 tsp. vanilla.

We like this served with fruit and syrup.
