1 1/2 cup sifted flour
1 tsp. baking soda
1/4 tsp. salt
1/2 cup butter
1/2 cup brown sugar
1/2 cup sugar
1/2 cup peanut butter
1 beaten egg
Mix flour, baking soda and salt, set aside.
In an electric mixer, cream butter, brown sugar & sugar.
Add peanut butter and mix well. Add beaten egg and mix until smooth.
Add sifted dry ingredients, gradually, stirring to combine.
Shape into 1-inch balls, put on greased cookie sheets about 2 inches apart. Flatten with a fork in a Cris-cross pattern.
Bake 8-10 minutes at 375˚F. Cool on a wire rack. Makes 3 dozen cookies.
