A good basic muffin recipe. It works well with added fruit.
2 cups flour
2 tsp. baking powder
1 tsp. salt
1/4 cup sugar
1 cup milk
1/4 cup butter, melted
Combine flour, baking powder, salt and sugar in a large bowl.
In a small bowl beat egg slightly, add milk and melted butter (or oil).
Pour egg mixture into dry ingredients all at once. Mix until just blended, batter will be lumpy.
Spoon into greased muffin tins. Bake at 425˚ for 20-25 minutes. Yield 12 muffins.
