Vegetable Fajitas

This marinade is really for chicken, and only potatoes really soak it up, so it doesn’t need to be done much ahead of time.

1/2 cup canola oil
1/4 cup red wine vinegar
1/3 cup lime juice
2 cloves garlic, minced
1 tsp. sugar
1 tsp. oregano
salt & pepper
1/2 tsp. cumin
(1/4 cup chopped onion if using chicken)

Mix together and pour over 6 cups of any combination of sliced vegetables such as sweet red pepper, onions, sweet potato, white potato, zucchini, yellow summer squash. Let it marinate about 30 minutes (or a few hours).


Serve with fajita fixings:
shredded lettuce
chipotle sour cream
Spanish Rice
Refried Beans
