Ginger Beer

Mike likes to make this on occasion.

1 tsp. dry yeast
2 tsp. flour
2 oz. fresh ginger, sliced
2 quarts boiling water
1 1/2 cups sugar
1 slice of toast

Mix yeast with 1/4 cup lukewarm water and flour. Make a paste and spread on toasted bread.

Peel the ginger and crush with the flat side of a knife. Put ginger in large crock and pour in boiling water. Dissolve sugar in water and let cool. Add the toast to the water and let stand in warm place for 24 hours.

Strain and bottle. Wait 2 days before serving.
