Frijoles

Basic cooking method for dried beans

about 1/2 pound pinto beans (or the whole pound and freeze any leftovers)
Cover beans with water, soak at least 8 hours
drain beans and add to pot with:
1 onion, chopped
salt
bay leaf
1-2 cloves garlic, crushed
1 Tbsp. canola oil

Cover all with 2″ of water. Pressure cook 15-20 minutes, or about 1 hour.

For refried beans, mash bean in a frying pan with a little cooking liquid and the onion.
