This is one of Mom’s staple dishes, so simple yet so delicious.
Chicken of your choosing, with or without bones
Bowl 1 – flour with salt & pepper
Bowl 2 – 1 egg, beaten & orange juice (a few tablespoons)
Bowl 3 – plain bread crumbs and orange zest
grease a baking pan and layer with a small sliced onion.
Bread the chicken by dipping first in flour, then egg, then bread crumbs.
Halfway through cooking, turn the chicken and pour about 1/2 cup of orange juice over the chicken.
Bake 350°, 1 1/2 hours for bone-in dark meat, less for white meat or boneless chicken
This will not be crispy chicken. If you want a little more crunch bake at a higher temperature for less time. Use a meat thermometer to be sure it is done!
