Corn Bread – Sweet

Adapted from The DASH Diet for Hypertension, by Thomas Moore, MD, New York, Pocket Books, 2003.

1 cup milk
2 Tbsp. canola oil
1 egg
1 1/4 cup yellow cornmeal
1 cup flour
1/2 cup sugar
3 tsp. baking powder

Whisk together milk, oil, & egg. In a medium bowl combine dry ingredients, mix well. Add milk mixture to dry ingredients, all at once. Stir.

Pour into greased 8×8″ baking pan or 12 cupcakes.

Bake 400˚ 20-25 minutes until toothpick inserted in center comes out dry.
