Harvey Cedars Crab Cakes

Mike’s version of crab cakes, the gold standard.

1 lb. crab meat
1 cup fresh bread crumbs
2 Tbsp. mayonnaise
1 egg, beaten
pinch of tarragon
pinch of parsley
salt & pepper

Mix dry ingredients. Add the egg and mayonnaise. Form into cakes and dredge in more bread crumbs.

Saute in butter until lightly browned.
