1 medium onion, diced
2 cloves garlic, minced
1 Tbsp. olive oil
pinch of fennel seed
1/4 tsp. of dried thyme
2 cans white cannellini beans
1 14 oz. can Italian-style stewed tomatoes
salt & pepper to taste
Dash of hot pepper flakes – optional
Saute onions until tender, add garlic & spices and cook for a minute.
Add beans, tomatoes, and salt & pepper and hot pepper flakes. Simmer 15-30 minutes until flavors blend.
