Butter Nut Balls

This was one of Mom’s traditional Christmas cookies. Children were to put the cherries on each cookie.

1 cup butter, softened
1/2 cup sugar
2 eggs, separated
1 tsp. orange rind
2 1/2 cups flour
1 tsp. vanilla
1 cup chopped nuts, walnuts were Mom’s choice
12-15 maraschino cherries, quartered
1 tsp. lemon juice

Cream the butter until soft and smooth, add sugar gradually, creaming after each addition. Blend in egg yolks, orange rind and vanilla, beat until fluffy. Add flour in increments. Knead slightly to blend thoroughly. Shape into one-inch balls. Dip each ball into slightly beaten egg whites mixed with lemon juice. Then roll into chopped nuts. Place on greased baking sheets. Press a quarter of a cherry into the center of each cookie.

Bake 350° 20-23 minutes
