Black Beans – Mexican style

1 large green pepper, chopped
1 red pepper, chopped
1 large onion, chopped
2 cloves garlic, minced
2 cans black beans, or 3 cups cooked beans (about half a bag)
1/2 14 oz can diced tomatoes
1/2 teaspoon oregano
2 Tablespoon vinegar
Some been cooking liquid or water

Saute peppers, onion & garlic until tender. Add beans and remaining ingredients and simmer about 20 minutes for flavors to blend. Serve over rice.

To make Chipotle Grill style dinner serve with additional sauteed sliced peppers and onions, salsa, cheese, shredded lettuce, sour cream blended with a chipotle pepper and adobo sauce, and chips of course.
