Every good Polack should have their own recipe for Corned Beef and Cabbage. This comes from my mother’s brother, Uncle Hank. He also was a great cook.
Corn Beef Seasoning (from Uncle Henry)
6 lb. Corn beef
4 or 5 bay leave
2 cloves garlic
½ cup vinegar (white)
½ cup sugar
Ok, that’s all my mom writes. But I needed more guidance so she told me:
Add these ingredients plus the little packet from the corned beef and enough water to cover the meat in a big pot. Simmer for about 3 hours. Boil the cabbage, potatoes and carrots in a separate pot to which you add some of the liquid from the beef for flavor. Start with the potatoes, let them cook for about 10 minutes, then add the cabbage & carrots and cook 20 min. more.
