These are delicious. Sadly, my mother had Alzheimer’s disease and there was one entire summer when she made these 4 or 5 days a week. It took a couple years but we learned to love them again.
Not long before she died I made them for her for dinner. She didn’t remember having them before but she still loved them.
1 large or 2 medium zucchini, shredded (about 6 cups)
1 Tbsp. Sugar
2 tsp. baking powder
1 tsp. salt
1 cup flour (approximately)
Combine all ingredients. Fry in a large frying pan with thin layer (about 1/4″) of oil.
Serve with sour cream or applesauce.
