Zucchini Flower Fritters

I have never made these and in fact I haven’t eaten them since my father passed away. Dad loved all things fried. Since he was a diabetic Mom started using equal, after all that made it better, right?  I think this summer I will have to give them a try, that is if I can win the battle the against the zucchini borers.

2 cups flour
2 tsp. baking powder
¼ cup sugar (6 pkgs. of equal)
2 eggs
½ cup milk
3 petal of zucchini flower per dumpling

Heat oil, Mom liked Mazola oil.

Combine all ingredients, except zucchini flowers. Batter should be a little heavier than pancake batter. Drop 3 petals into the batter. Spoon batter around the petals and scoop. Drop each spoonful into hot oil.

Sprinkle with powdered sugar before serving. These are best eaten immediately.
