3 cups flour
3 cups water
6 eggs
1 teaspoon onion salt
1/2 teaspoon salt
Beat eggs until foamy. Add in remaining ingredients. Fry small pancakes in a small non-stick frying pan. Add a drop of oil to the pan for each pancake. Fry just until pancakes form then turn over and remove immediately from the pan. The pancakes will not turn brown.

3 lbs. Ricotta cheese
4 eggs
1/2 teaspoon salt & sugar
1/2 cup grated Parmesan cheese
1 cup grated Mozzarella cheese

Mix all the filling ingredients together in a large bowl. Fill the pancakes. Cover will sauce and more mozzarella.

Bake at 350° for 45 minutes.

Each filled pancake may be placed on a cookie sheet lined with cornmeal and frozen. Thoroughly wrap frozen manicotti to store. Cook as above.
