Cornish Pasties

Ok, so this isn’t from my mother but she loved them too.

1 recipe Foolproof Pie Crust
1 lb ground beef or chuck diced finely
1 lb potatoes (more or less), peeled and diced finely
1 medium onion, minced
Pinch of sage or thyme
Vegetable of your choosing, diced like the potatoes – traditional English ingredients would be carrots, rutabaga (yellow turnip), turnip or peas. I like zucchini, makes my in-laws crazy.

Egg wash

Combine all vegetables & meat in a large bowl and mix gently.

Roll out a piece of the pie dough; pile the meat mix on half the dough. Fold over and crimp. Place on baking sheet. Continue for as many pasties as you wish to make.

Prick the top of the pasties and brush with egg wash; bake at 425º for 45 minutes or until nicely browned.

This amount usually makes about 6 or 7 pasties with enough crust left over for a single crust pie.
