Chicken / Paneer Tikka Masala

This recipe from our good friends the Khambhati’s

2 lb boneless chicken cut into thin strips (or paneer cubes)

Marinate for at least 2 hours in:
1 Tbsp. oil
1.5 tsp red chili pepper (cayenne)
1 tsp turmeric powder
2 tsp ground cumin
2 tsp ground coriander
3 tsp tandoori masala powder
2 tsp salt
2 Tbsp sour cream / yogurt
1 to 2 tsp tomato paste

For more sauce add more yogurt or sour cream.

Red onion, sliced
Red & green bell pepper, sliced

In a large wok or frying pan, heat oil until very hot. Add the chicken and stir-fry. Add onion and peppers. Stir fry 2 or 3 minutes until desired doneness. If you are using paneer, cook the peppers and onions first for a couple minutes and then add the paneer.

Garnish with fresh coriander
