Anise Cookies

Recipe from Aunt Mary D’onfrio

2 sticks of butter melted
1 cup sugar
1 1/2 tsp. vanilla (or 1/2 vanilla and 1/2 anise oil)
6 eggs
5 tsp. baking powder
4 1/2 cups flour, plus another cup if needed

Mix butter, sugar and vanilla. Add eggs, one at a time. Add baking powder and flour. Take a walnut size piece of dough and roll into a snake, then coil like a snail. Place on greased cookie sheets. Bake for 10 minutes at 400°.

Icing for Cookies
2 cups confectioner’s sugar
Milk, approx 2 tablespoons
a few drops of Anise Oil
food coloring if desired

Add the anise oil to the sugar, stir in enough milk to form an icing paste. Dip cookies in icing and place on rack to dry.
